Apple Pancakes

Ingredients

  • 1 lb Apples
  • ½  Lemon (zested and juiced)
  • 3  Eggs
  • 2/3 cup Milk (150 ml)
  • ½ cup Sugar (120 g)
  • 1 ½ cups All-purpose flour (250 g)
  • 1 pinch Salt
  • ½ tsp Baking powder
  • ½ tsp Cinnamon (optional)

Directions

  1. Peel and core apples, then grate them into the Ultimate Mixing Bowl 2L.
  2. Add zest and juice of lemon to the grated apples, seal the bowl, then shake to coat the apples with lemon juice to avoid oxidation. Set aside.
  3. Add remaining ingredients to the Ultimate Mixing Bowl 3.5L, seal and shake side to side 10 times, then alternate up and down and side to side for 30 sec. The batter should be quite liquidy.
  4. Add the coarse grated apples and finishing mixing with a spatula until well combined.
  5. In a lightly greased or non-stick frypan (approx. 28 cm / ±11 in.), cook the mixture on medium-high heat, by ladling it into the pan a little at a time, approx. 30 ml / ±2 tbsp, spacing out each ladleful as you pour. Cook 3 pancakes at a time, approx. 2 min. per side. Mixture yields 5 batches of 3 pancakes.
