
Choco-stuffed Banana Muffins

Ingredients
- 2 Overripe bananas
- Egg
- 1/3 cup Vegetable oil (80 ml)
- ¼ cup Milk (60 ml)
- 1 tsp Vanilla extract
- 1 ½ cups All purpose flour (185 g)
- 1 tsp Baking powder
- 1 tsp Baking soda
- ¼ tsp Salt
- 1/3 cup Chocolate chops (60 g)
- For the filling:
- cups Boiling water (500 ml)
- ½ cup Choco chips (85 g)
Directions
- Preheat the oven to 180°C / 350°F without convection.
- Mash bananas with a fork in Ultimate Mixing Bowl 3.5L.
- Add egg, oil, milk and vanilla extract, whisk until fully combined.
- Sift flour, baking powder, baking soda and salt into the wet ingredients. Mix together with a spatula until you have a consistent batter.
- Add chocolate chips and stir until well incorporated.
- Evenly divide batter** into a muffin tin*** then bake for 20-25 min. or until a toothpick comes out clean from the center of a muffin. Allow to cool.
- While muffins are cooling, pour boiling water to 0.5L / ±16 oz line in the Ultimate Mixing Bowl 2L. Using the Ultimate Mixing Bowl 1L place chocolate chips inside . Carefully place the Ultimate Mixing Bowl 1L into the bowl with the water for a “bain-marie” effect and allow to stand for 10-15 min. Use a silicone spatula to stir chocolate until fully melted.
- Create holes in the muffins using a round cylinder approx. 1 cm / ±½ in. in diameter.
- Pour melted chocolate into holes and place in fridge for 1h.
